Not your Momma’s Chicken Noodle Soup! (spicy!)

Its getting colder now that Fall has arrived.  I love a great soup but haven’t tried too many.  Homemade Chicken Noodle Soup is one of  favs but I wanted to spice it up and make it hot!  I saw this recipe on SeriousEats.com and its suppose to be a schezuan type soup. I had to alter mine because I was missing a few ingredients. Also this is my first time using Leeks!  I wanted to give them props however and go check out their site for other soups!  Here is my version:

-In a big pot boil water for noodles while you also do steps below

-wash, trim off ends and thinly slice a  leek

-thinly slice about 6 shiitake shrooms

-in saucepan cook leeks and shrooms in a tablespoon of EVOO until softened

-add 5cups of Chicken stock

-add 2 Tblsp of Soy Sauce

-you are supposed to add 1tblsp of Rice wine but I didn’t have any SOOOOO I used a half shot of VODKA & half shot of Rice Vinegar

– I didn’t have schezuan pepper so I mix together a tsp of cayenne pepper and a Tblsp of regular black pepper and add to saucepan

-I also threw in a couple shakes of Jamaica Me Crazy Pepper(you don’t need to tho)

-throw in a cinnemon stick

-add a couple turns of fresh ground sea salt

-Bring to boil and then reduce and simmer for about 8 min

-cook desired noodles (I used egg noodles)

-shread a rotisserie chicken(easy buy at the store)

-after noodles are al dente, drain and  add to saucepan of Chicken Broth

-add chicken and simmer for about 5min.

You have Spicy Hot Chicken Noodle soup!  Yippppeeeeee!  It was really good

*** you can control the heat with the cayenne pepper***
