Popover PERFECTION (Thanks BLT Steak in New York)

If you have never been to BLT Steak in New York…..GO!  They have one in Los Angeles as well but I like the NY one better.  Restaurants bring you bread before dinner at times, but ohhhhhhhhh man times have changed!  BLT brings you these unbelievable popovers that A) are HUGE and B) have theeeeee most perfect amount of flakiness, crisp and cheese! They were nice enough to share the recipe and here it is.  Trust me they are so easy and worth the 50 min it takes to bake them.  MAKE THESE!

*** I cut this recipe in half because I only made 6****

4 cups of warmed milk

8 eggs

4 cups of flour

1 and 1/2 heaping Tblsp of sea salt

2 and 1/4 cups grated gruyere cheese

Popover pan

-heat oven to 350 degrees and put popover pan in there to warm up

-warm milk in a pan and set aside

-whisk eggs until frothy and add to warm milk (be careful NOT to scramble the eggs)

-sift flour and salt together

-slowly add to milk/egg mixture and stir until smooth

-take popover pan out of oven and spray with cooking spray

-fill each cup 3/4 full

-top with a handful of the gruyere cheese

-bake for 50 min turning the pan 1/2 turn after 15 min

***they are supposed to bake up super big over the cups so don’t panic***
