In honor of Cinco de Mayo. Here is my Jalapeño-Mango Salsa. You can add as much jalapenos to turn up the heat, just make sure you leave some seeds in there as that’s the HEAT! I use just a little bit of mango because I want the flavors of the Salsa to be tasted NOT just a sweet mango mess. But add as much as you want…….its your choice! Now go make this today for your guests and knock back a couple tequila’s while you’re at it. Slainte!
-finely chop one jalapeño (remove half the seeds, or more seeds the hotter the heat)
-finely chop 1lb of baby yellow and cherry tomatoes.
-mince a couple cloves of garlic
-finely chop a 1/4 cup of cilantro
-finely chop 2 PERSIAN cucumbers….they give great crunch and are a little sweet (but regular cucumbers will do)
-mix it all in a bowl
-then add 1/4- 1/2 cup of finely chopped red onion
-add 1/4 cup of chopped fresh mango
-then squeeze a 1-2 lemons in and salt and pepper to taste
Serve with chips or put over tacos or just eat it out of the damn bowl …….ITS THAT GOOD!
