Come on….admit it! When you were a kid you lovvvvvvvved macaroni salad and tomorrow being Memorial Day, there will be macaroni salad all over the country. Growing up in Montana we were not rich by any stretch so macaroni salad was easy cheap and yummy. I love it! We would have picnics with our HUGE Irish family (cousins, aunts, uncles, dogs etc) at my favorite place on the planet…..WASHOE PARK in Anaconda Montana. My Aunt Ikie makes the best macaroni salad on the planet. This is my version. Make it tonight or the day before you want to eat it so all the flavors can set in. Ya ready…..( you can add ANYTHING to your salad, i.e shredded chicken, cubed cheese, jalapeños etc) I like this (esp the pickles)
-Boil one box of Barilla elbow macaroni until al dente (firm)
-Chop finely: 1 small can of black olives as well as about 6 already sliced Bread and Butter pickles (the long skinny ones you put on sandwiches)
-Chop finely: 2-3 celery stalks and 3/4 of a red pepper
-Add mayo and mustard to YOUR liking ( I like mine just coated not soupy) so about 1-1 1/2 c mayo and 1/4 c mustard
-salt and pepper to taste and MIX IT ALL TOGETHER.
-Put in fridge for at least a few hours before eating BEST if you let it sit overnight.
THEN JUST DOOOOOOO the Mac-a-roni! Hee! 🙂 Enjoy Happy Memorial Day. Please remember those who have given us FREEDOM!
